Black Bean Soup

Black beans, brown rice, vegetables and Caribbean spices pair perfectly in this creamy soup. Serve as soup or create a vegetarian burrito bowl. Meat lovers may choose to cook with a beef bone or add cooked, crumbled sausage. Cook time 2 to 3 hours after soaking the beans, all day in a crock pot, or use your Instant Pot (50 minutes in Meat/Stew setting).

  • Makes 10 cups

  • Instructions: Soak beans in 9 cups water, then add package rice, veggies and seasonings and cook 2 to 3 hours to desired tenderness and consistency. Garnish with lemon slices, shredded cheese or a dollop of sour cream.

  • Add cooked diced sausage or other meat.

  • Leftovers can be frozen. Ideal for next day or at-work lunches.
